Tahini Date Banana Bread

Banana bread made even better — sweetened with dates, rich with tahini and just as good the next day

What you need
Ingredients
3 over ripe large bananas
2 cups organic flour
2 tsp baking powder
1/4 tsp cinnamon
1/2 tsp salt
1/2 cup packed dates
1/2 cup tahini
1/4 cup olive oil
1 cup walnuts
2 eggs or chia eggs
2 tsp vanilla extract
*1 chia egg = 1 tbls chia seeds, 3 tbls water*
How to make
Method
1. Preheat oven to 180 degrees
2. Line loaf tin with grease proof paper through the middle, in order to easily remove
3. Combine flour, baking powder, cinnamon and salt in small mixing bowl
4. Mash bananas in a large mixing bowl, whisk in honey and tahini until combined then slowly add oil while you continue to whisk (whisk by hand)
5. Add eggs or chia eggs and vanilla extract and whisk until all incorporated
6. Add dry ingredients to wet ingredients and stir until well combined
7. Chop walnuts & dates and fold into batter
8. Pour batter into loaf tin, smooth with spatula and top with halved/whole walnuts
9. Bake in the oven for 45-50 minutes, use a toothpick to check consistency, it should come out clean
